[Jeffrey] As heard on episode 4 of Meet Me at the Deli, Jon Breen from Victoria, British Columbia (in Canada) wrote in with a question about canning gefilte fish, but he also teased a corned moose recipe (think corned beef…but moose) that he developed as a moose hunter in Canada’s Yukon Territories. Jeffrey and Jon emailed back and forth and uncovered a dedicated deli lover’s amazing recipe for moose brisket curing and steaming (and potentially smoking in a Montreal-style).
